Rosé By-Catch Dinner

"I wrote this menu based on the flavors of spring and the wines selected by Patrick. Bycatch is the other fish caught when fishers are seeking something specific. Instead of throwing it back, they sell it to us. Life becomes exciting when I don't truly know what I will be receiving until the day prior."

The only course without bycatch will be dessert. Surprises all around!
